- 2-1/2 cups sugar
- 1 cup butter or margarine
- 4 eggs
- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1-1/2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground coriander
- 1-1/2 cans (15 ounces each) cooked pumpkin
(OR 2-1/2 cups mashed ripe bananas) - 1/2 cup walnut pieces
Cream sugar, butter and eggs in large bowl.
Combine separately flour, baking powder, soda, salt and spices. Add to creamed mixture alternately with pumpkin, beginning and ending with dry ingredients (batter will be thick). Stir in nuts.
Pour batter into two greased 5 by 9 inch loaf pans. Bake at 350° Fahrenheit for 60 minutes or until wooden pick inserted in center comes out clean.
