Dad’s Rhubarb “Easy as Pie”
Victor Petitt’s recipe. Makes its own crust.
- 3 whole eggs
- 1 cup milk
- 1 cup granulated sugar
- 1 cup Jiffy® baking mix *
- 1 teaspoon vanilla extract
- Pinch of salt
- 3 cups fresh cut rhubarb
Combine first six ingredients, then add the rhubarb.
Pour into a greased 9 inch pie pan.
Bake at 350 to 375 degrees Fahrenheit for 40 minutes or until done.
* Bisquick® works poorly in this recipe, but 1 cup all-purpose flour and 1 teaspoon baking powder work well in place of the Jiffy® mix.
