Dad’s Rhubarb “Easy as Pie”
Victor Petitt’s recipe. Makes its own crust.

• 3 whole eggs
• 1 cup milk
• 1 cup granulated sugar
• 1 cup Jiffy® baking mix¹
• 1 teaspoon vanilla extract
• Pinch of salt
• 3 cups fresh cut rhubarb

Combine first six ingredients, then add the rhubarb.
Pour into a greased 9 inch pie pan.
Bake at 350° to 375° Fahrenheit for 40 minutes or until done.

¹Bisquick® works poorly in this recipe, but 1 cup all-purpose flour and 1 teaspoon baking powder work well in place of the Jiffy® mix.
