Oo is pronounced in two syllables to rhyme with cuckoo.
3/4 cup granulated sugar
1/2 cup oil (canola works well)
1 egg
1 teaspoon vanilla
1-1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 cup nonfat dry milk powder
Cream sugar, oil, egg and vanilla. Mix flour, soda, salt and
dry milk separately, then add to creamed mixture. Dough will appear
dense and oily. Drop by teaspoons onto ungreased cookie sheet.
Flatten a little if desired. Bake at 350 degrees Fahrenheit just until
dry on top, about 10 minutes. Makes 18 cookies, 3 inches in diameter.
Variations That Rock:
Cinnamon — the original 1987 variation with a taste
and texture much like snickerdoodles. Just add 1 teaspoon cinnamon
with the flour mixture.
Coconut — chewy and delicious; a bit different from
coconut macaroons. Just add 1 cup of flaked coconut to dough after
mixing.
Peanut Butter Oo (PBO)
— Use this ingredient list:
3/4 cup granulated sugar
3/8 cup oil
3/8 cup peanut butter
1 egg
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
(Omit the salt)
1/8 cup nonfat dry milk powder
Nuts and/or Chips — add a total of one cup to a cup and a
half to the recipe. Experiment! Our favorite mixture is 1/2 cup
each of white and chocolate chips plus 1/2 cup of chopped walnuts.
