Tomato allergy friendly
Wendi’s younger brother passed away, and his memorial service was on September 5, 2021. An older brother made a dish similar to this for the memorial. Wendi asked me to try this at home but make it without tomato so she can eat it. The brother’s dish used pork-and-beans and a can of tomato sauce, so I substituted Bush’s Original baked beans along with mustard and brown sugar (I didn’t change the spices much).
Alternatively, you can replace the water with an 8 oz. can of tomato sauce to deepen the flavor. This protein-rich dish can also serve as a main course.
Brown ground beef with onion; drain. Fry bacon, then crumble. Combine with smokies, beans, mustard, brown sugar, water, and seasonings. Simmer in a pan about 15 minutes to blend flavors. This can also be done in a crock pot.
Serving suggestions: try serving over rice or pasta; top with shredded cheese and/or sour cream.
